Executive Chef/Owner Jean-Claude "JC" Cavalera


Chef Jean-Claude Cavalera grew up in France, completed his culinary training in the french riviera and has spent the past 42 years working in some of the best restaurants in Europe and the United States.


His culinary style draws from his french roots, his classic European training and his love of using the freshest ingredients available. After training at the Plaza Hotel in France, he worked at the Savoy in London and Loew’s Hotel in Monte-Carlo. His Culinary expertise have allowed him to cook for many notable personalities, including Ronald Reagan, Jimmy Carter, Barbara Streisand and Michael Jackson.


In 1989, Jean-Claude took a position as executive chef at the Ritz-Carlton Boston. There he had the great fortune to meet Julia Child, and the two became good friends. Many wonderful opportunities have presented themselves to Jean-Claude, and he has certainly made the most of them.

The popular chef makes his re-entrance into the Grand Lake community after four years away as executive chef at the Warwick Denver Hotel and a teacher at Escoffier School of Culinary Arts in Boulder. He opened Caroline’s Cuisine at Soda Springs Ranch in 1991 with Caroline Johnson and they kept the four-star restaurant going for 20 years. Now he starts anew with Stillwater Grill, a farm-to-table concept that allows him to foster his creative culinary perspective.
